Last night, Derek decided it was time to clean the litter box. Maggie likes to go RIGHT at the entrance, and if the box is too small, she misses. So the current one we have is MASSIVE.
Derek picked it up by the handle on top, and carried it over to the center of the room. He takes the lid off, and I yell “OH NO!” once I realize little Kiley is in the litter box… utilizing it.
The look on her face was the same look of terror that Derek had on his face. I laughed so hard, for a good hour. How did he not notice there was a cat in there when he picked it up? What was going through her mind, when her “safe haven” box was lifted into the air?
Later on the night, laying in bed, she jumped up and scared me. I immediately thought of the events that took place earlier in the night and laughed again. For almost an hour.

This is one of my favorite things to make. Probably 5000 calories per serving, but super yummy.
Start by browning the meat. Sometimes I use beef, sometimes I use turkey.

Once it is browned:

Then drain and rinse. I rinse to get ALL of the fat off. Make sure its hot water, or else it will solidify the fat.

Once drained, put the meat back into the skillet, add seasoning and water:

Preheat oven to 350. Layer tortilla chips, shredded cheese, and beans on a cookie sheet. The easiest way to do the beans is to put them in a ziploc bag and cut the corner off. You can then pipe them onto the chips.

Put that in the oven for a few minutes, until the cheese is melted. After all of the water has been cooked out of the meat, put it onto the chips/cheese/meat. From there, put another layer of cheese on top of the meat. I put some of the Tostito “con queso” dip on top. Put it back in the oven until the top cheese has melted:

This is just the “base” for nachos. You can add any other toppings you want. Derek doesn’t really like any thing else on it, but when I make it for myself I add chopped lettuce, tomatoes, olives and sour cream.
